Eggs


100 year old, 1000 year old egg, otherwise known as 100 year old egg in Chinese cuisine, produced by preserving a fresh duck egg in a mixture of spices. P'i Tan is covered in alkaline mud before being covered in ash, tea leaves, and rice husks. Hom tan is preserved in brine and saltpeter. The eggs are actually seldom preserved longer than 100 days.
